Apart from the Grouse Shooting season (August 12th - 10th December) and Deer Stalking Seasons (generally between July and February) there is little or no restriction on walking in Scotland's countryside. Even within these periods restrictions are generally short term and would be made known locally. Farmers also have a desire to keep people and dogs in particular, away from sheep during lambing time. If in doubt, ask.
YesScotland likes to make a clear dividing line between pure walking in the hills and climbing, mountaineering activities. Even so, if you are planning a walk in the hills let someone know where you are intending to go and when they can expect you back. Be careful, as the weather in Scottish Hills can be extremely changeable - one minute you can be in bright sunshine and the next you are enveloped in cloud. Also be as prepared for inclement weather as well as for hot sunshine.
There are many guides and books you can buy which describe good walks, especially circular walks and investing in one of these may prove valuable. Local stores and information centres will be able to help in addition to your accommodation provider.
You can also hire guides or go on organised guided walks. Many of the local councils have Ranger Services and many of their planned events can be very rewarding - they know where to go to see wild animals and birds and when best to see them, so why waste your own time looking for the proverbial needle in the wrong place at the wrong time of the year!
Finally, "respect" is a word used by many but only understood by a few. A few years living in the Highlands, for instance, will teach anyone to respect our hills and mountains. Disrespect them by taking too many risks and they could bite you. Yellow and Red helicopters in the skies over the mountains are not there for sightseeing purposes. There is nothing "cool" about being foolish in our hills and mountains. But the experience of being there definitely is!
